How do I go about creating different versions of my course...such as changing pin placements? Thanks.

It's easy. Once you publish your course, go to GNCD, and in the screen from which you select the file to open, you push the button used to cycle through menus (R1 - L1 on ps4) so you see published courses. You pick the one you want to edit, and open it, once the file is open, you can rename it and do whatever you want with it

Just ignore it?

Technically it's true. The published course can't be edited. That's why you need to rename it. The original version will remain untouched, so you will have two different courses

Glad to hear you say that. Can I delete a published course? I found its too difficult with the wind and want to tone down green firmness and some pin placements.

You can test your courses with wind before publishing by using the offline mode.
Basically you do this. In the main menu click go offline. Use the normal process to play a round of golf. Use the bumpers to scroll to your unpublished courses. Same place where you normally search for courses. Voila You now have wind.
