is it possible for me to save a copy of my course so that after i publish it i can go back and make changes if needed?

Not exactly.
You can make changes after you have published but they will not be saved or overwritten into the published version, you have to publish the 'new' version as a seperate course.
To make changes after you have published go into the GNCD as normal but then press RB to bring up 'Published Courses' - Select the relevant course and a copy of it will now be created for you to edit under the name 'New <course name>' You can now make whatever changes to it you want to as this copy is now an unpublished course. When you are done with it change the name to whatever you want and re-publish.
