I try to hit the side of the hole when I putt and have the ball grab the hole edge and spin in. If my ball goes in the hole at the center of the hole it is an accident.

When I search google for side bite putting I don’t see many PGA training videos teaching you how to put spin on a putt and aim for the edge of the hole.

Might be the reason you get a lot of lip outs.

Makes no sense to me either. The ball's greatest chance of falling into the hole has to be dead centre surely.

I do this because it is the way the game worked in the original TGC ten years ago. It is SUPER hard for me to change things. It took me six months to change my swing in this game from trying to avoid tempo like in the glitch from the ten year old game and I still struggle with it sometimes.
