What is everyones favourite and go to theme when starting out designing and why?

Delta.
The bare terrain reacts the best when planting trees which makes it extremely flexible. Now that we can import trees from any theme, using Delta doesn't lock you into the green/grey/white palette the way it used to.
Delta also has the widest array of backdrops - island, coast, hills, and small mountains are all available.
For me, the only drawback is that the Delta theme doesn't offer cross-hatched mow patterns on the green. Instead, the green mow pattern available is stripes, which looks good from some angles, but not so good from others.

It matters way less than it used to, but agree that Delta is the current go-to. I'd really look at backdrops, natural terrain and lighting (this one's hard to pin down though). Personally, my go tos are:
Highlands - has islands, mountains, gets a nice rocky natural land texture, good lighting Delta - all the reasons Patrick mentioned above Tropical - similar to delta but without the sandy texture - instead you get the rockier one Swiss - mountains! Countryside - the best natural ground texture in the game. Drawbacks are no autogen planting to speak of and no island backdrop Autumn/Boreal - can have some very cool natural ground texture. Desert - islands and the natural terrain is GREAT. With the addition of all trees, this has become miles more usable. Steppe - same as above, but more red.
Avoid like hell: Rustic - Countryside does everything better Harvest - Autumn does everything better

If a third-rate designer can chime in ... Echo Ben's ranking, but I do wish highlands had a few more autogen trees at maximum (not bushes) and Delta had a few less. Why, you ask ? Highlands really lets the top designers show their stuff ... that's not me, results-wise, but I like to try on it. I'm not as competent a planter as the best of 'em, and I'm not as personally familiar with relatively treeless courses, so it doesn't end as well as I'd like. Delta really can simulate a lot of places - the trees work well as scruffy Central Texas live oaks - but there can be a lot of manual clearing to find the spaces for planted trees to brighten it up. I, for one, am highly annoyed by the 'clear generated' invisible brushes being in the way . Tropical has a wee much generic trees for me, but palms are just fun for me to work with, so I've gone there a couple of times. You almost can't screw up your scenic values in the Swiss theme, as Ben says 'Mountains !'. I really like the way it's shallow water looks. I'm working on an Autumn effort right now, maybe I won't think it's too garish like all my other attempts there. Countryside is lovely, but requires a deft planting hand - mine are 'un-deft'. I like Boreal, but I thought the bunker edges were a source of disdain from people in the last game version, so I've mostly avoided it since. Successful desert & steppe designers - I bow down to them, I've published one in this game, but was not that thrilled with it (it did get accepted here, but I think it fell through the cracks, tbh) Have a lot of fun, and welcome aboard !

Oh, sorry if it wasn't clear - mine weren't rankings (apart from the bottom two). I think pretty much all are interchangeable, bar Delta clearly being the most versatile.

As a lidar based designer, themes have been one of the main hurdles for me. Due to the impact on object count and memory when using lidar terrain, I try to stick to using only the theme native objects which makes it difficult to use a geographic correct background at times.

Delta is king simply for its versatility and ability to change textures as the designer sees fit. I’d put Boreal up there too but it doesn’t have an island option
