I think that wind as a limited effect on the pitch shot. Elevation does but i find it to be so erratic that i would rather loft up or down with either a normal or flop shot than pitch.
If you do use the pitch, i think that ball striking is the most relevant variable. Poor tempo or direction seems to be exaggerated for me with the pitch so I try to stay away from it completely. It is also difficult to judge the run off once the ball does land.

I haven't found much effect with wind or elevation in this game on pitches or flops around the green. Several instances where i try to club down because of wind or big elevation and i fly it way past where it should go. Same even with flops in the bunker or in rough. I'll have a lie with a max of 75% power and a big elevation and I'll use a 30 yard flop that flies 33 yards before rollout. Makes zero sense how some of this all works.
