I think the Rustic theme is the easiest to work with for beginning designers. The natural terrain blends fairly well with the heavy rough which means you don't have to lay down your own heavy rough of you don't want to.
Other than that, all the themes have things about them that work really well, and other things that just don't look right.
I suggest using a theme that most closely matches the terrain you're most familiar with (so, Pacific Northwesterners might want to use Boreal, for example).

I agree with Griz, fuzz around with a few holes, three or four are enough, and then start switching the themes to see which one fits better your eyes. For a novice designer, I'd avoid desert theme as it gives you a huge amount of terrain to cover without the aid of the autogen trees. But the most important thing wags, don't try to be Canuck, or ArcticFury, or anybody else. Design what you like and for yourself.
Oh, and you don't need to play golf to design nice courses. It helps, but when I started playing golf IRL I had already designed some courses.

I'm concentrating mostly on making sure the course is clean to start. No rough edges or obvious mistakes. When the preliminary course is done, I'll send you the name. You can test it and then tell me what to fix or, if it's beyond hope, tell me that I obviously don't have any talent for this at all. I won't be offended. Because honestly, I'm looking at what I've done so far and it's totally underwhelming. It looks like a budget course that somebody put up in their backyard. Don't get me wrong. It doesn't play easy. Certainly not something you give to CC AM. But it's just boring. At least to me. Too standard looking. Nothing interesting about it. That's where imagination and creativity come in and I have none. You'll see what I'm talking about when you play it.

It was decent, not great, but not horrible, so I don't know why you should not be able to put out some interesting holes
