Is it possible to see how wind effects a course while you are creating it?
Also - I have HEARD that each theme has a different wind intensity but has anyone ever listed these??

Yes. Go into offline mode and u can load unpublished courses. Go to courses bumper over to unpublished courses. And it will have random wind upon load

What Clint said. Or, if you want feedback from others, you can publish a beta and have others play it. If you do this, make sure you rename it from what you're going to publish it as.
Also, for the winds by theme, there is no specific range, as any theme could technically be anything, but they are commonly in an "area" compared to other themes. For example, themes like Tropical and Highlands typically have higher winds, while themes like Rustic and Boreal are usually calmer.
