Hard to explain via writing, videos are better, but I don't think there is a "right" way to do rivers, lots of different methods, depends on the designer's preference. And it depends on if you want a shallow little creek/stream meandering through the rocks or a deep, wide, big fast river. Gently sloping banks or steep? Each one requires different approach. From what you are saying, I'm assuming a big, wide, deep river with medium sloping banks?
I'd be using the soft fuzzy oval brush on the next-to-last page, 2nd one from the left on the top row. I'd use the "flatten" brush (not "raise), and I'd lower the elevation on it to deep enough where I couldn't see the bottom of my river from zooming out fairly high up - maybe 15 feet or so. This brush will also give you gradually sloping banks, instead of a deep-cut channel. I'd adjust width and length of it whatever you feel you want for the width/size of your river, and then as I go along I'd obviously rotate it, increase/decrease it sporadically to give the river an uneven, meandering, natural look, with turns and so forth. Then go back with the same brush, sized smaller, I'd go over the river and fix any spots as needed. If a bank looks a bit steep somewhere - like on a turn - use the same brush, on flatten, on those river banks, but reduce the elevation to maybe 2-3 feet or even.
Next, I'd use the star-shaped fuzzy brush on the 3rd page from the last page, 4th row down on the far left, and use it on the banks of the river to give some interesting, natural-looking terrain detail. Time-consuming but worth it. Just place it over a section of bank and then raise it up 1-3 feet. Lather, rinse, repeat.
Hope this was helpful.

I guess the biggest thing to note is the use of the FLATTEN command and the fuzziest brushes to give your river banks natural looking banks.
There's no magic shortcut here, either. Getting nice slopes takes work, trial and error, and lots of patience.
