... can anyone tell me if/how you control which plant you're working with when you adjust the slider afterwards to get the right look ? It seems random ...sometimes it adjusts the last thing I planted, other times the initial plant, but rarely every species within the path.

No idea - looks like it murders the plant meter so I won’t be touching spline planting except for maybe grass. I imagine the workaround would be to use multiple separate splines

What I've been trying out lately with grasses is to make sure each spline ends at a different place so that I can find/control the fill level of the spline I want to adjust. It's helpful with adding a mix of native grasses into large areas but I'm setting my fill levels around 0.1 to not blow out the plant meter. Even at 0.3 it will run up a tab pretty fast.

Here’s the method for grass;
Lay initial spline of one type of grass, go to spline point and click edit filll amount to 0.1, then click duplicate spline and select another type of grass and repeat this step twice and you’ll get and area with 3 different types of grass and it looks great!
Remember you just click on the spline point to edit and duplicate
