I just played an absolutely incredible society tournament (non-TGC), my best finish ever. Sadly I bogeyed the last hole to finish 2nd, but I beat some folks who thoroughly trash me most weeks. I got curious to see if they were in any of the TGC pro leagues (I just started TGC, landed in CC-I). I went to the recent Platinum tournament’s results and clicked the XB1 filter and there were only 3 people listed! (The guy who got first to my second was one of the 3, so made me feel pretty good about my results!). But that’s crazy to me, do you have to have a PS or PC to actually compete in the pro tours?

The general consensus is that it's slightly easier on those platforms. Less so now that the tours have switched to Pro swing difficulty (this was what motivated the change to try and bridge the gap).
We still have guys that compete on Platinum like you say though and I do pretty well on True Sim, I was one promo mark away from platinum at the end of last season on master swing, didn't enjoy the change to Pro swing and revoked my card and have since qualified back into Kinetic through Q School last week after wising up lol so yeah it definitely can be done. Not impossible and great players on every platform for sure!

I only have the Switch and XBox to compare - but it seems like I'll be doing fine with the XBox wireless controller for most of a round then suddenly get two or three severe red slows in a row. Then I turn off and restart the controller and it's fine for a while. Could be mental, but seems odd.
On the Switch, my tempo was very consistent - seemed like almost every shot was a slight gray fast. Rarely had perfects or slows. On the XBox, it seems like I can "feel" the tempo more - I know when I'm fast or slow, and hit a ton more perfects than on the Switch. So my game has steadily improved - but the controller thing is downright frustrating at times.
